The journal is dedicated to publishing high-quality research papers in the fields of food safety, biochemistry and food processing technology. It aims to enhance understanding of the relationship between food and human health and to promote the sustainability of food systems.

The research aims to isolate and characterise the kappa-carrageenan compound from the seaweed Kappaphycus alvarezii, and to study its antimicrobial activity, whilst verifying, through molecular docking, its targeting of the HasA protein to elucidate the mechanisms of its potential efficacy.
